Ingredients:

  • 2 medium sized sweet potatoes
  • 1 lb ground turkey
  • bell peppers (I used red, green, yellow)
  • red onion
  • whole foods pre-prepared guacamole and/ or organic avocado
  • Siete salsa ( I used two different kind (mild casera, salsa cremosa, – use your choice))
  • frontera tomatillo salsa
  • 1 pack siete seasoning
  • spring mix or kale
  • olive oil

Instructions

  • Cook sweet potatoes in oven at 400 degrees fro about 45 min – 1 hour in advance if you can & set aside
  • Saute chopped bell peppers + onion for about 3 minutes on medium high heat
  • Add ground turkey to pan & brown
  • Once ground Turkey is brown follow instructions on siete seasoning pack to season meat mixture + turn on low while you prep the bowl
  • Half your sweet potatoes & cube them
  • Add cooked ground turkey to a bowl, then red salsa, then cubed sweet potatoes, add guacamole OR sliced avocado, top with your choice of greenery, add cremosa salsa, top with a quartered lime! ENJOY!

Note: There’s so many more things you can add to this bowl, like vegan sour cream (i like kite hill or forager brand) but I kept it simple to keep it lean in this weight loss season!
