Ingredients:

·      1 ¼ cups of flour (I used spelt & oat flour)

·      2 Tbsp sugar (I used raw cane sugar)

·      1 tbsp baking powder 

·      Sprinkle of salt (about ¼ tsp)

·      1 tsp cinnamon 

·      2 Large ripe banana (1 for mixture 1 for serving)

·      1 Tbsp coconut oil 

·      ¾ cup of non-dairy milk 

·      1 tsp vanilla extract

·      Chopped pecans (Optional)

·      Honey 

·      Date syrup 

·      Vegan butter 

Instructions:

·      Mix all dry ingredients in a bowl 

·      Mash 1 banana up in a bowl + coconut oil & mix 

·      Add banana mixture + vanilla & milk into bowl with dry ingredients 

·      Heat pan with vegan butter, once hot, pour about a ¼ cup into pan (pour more if you like bigger pancakes)

·      Flip once bubbles begin to appear 

·      Cook pancake through

·      Plate & top w/ pecans & sliced bananas, drizzle honey, & date syrup

·      Serve & enjoy!
