Ingredients:
- Olive Oil
- 1 lb organic ground turkey
- red, yellow, green bell pepper (chop no more than half of each)
- 1/4 cup red onion
- your fave seasoning (I use slap ya mama, garlic powder, onion powder, green goddess from Trader Joe’s)
- Rice (Any Organic Jasmine rice)
- Gotham Greens Vegan Pesto Sauce
Instructions:
Meatballs
- Set oven to 400
- Chop Bell Peppers + Onion, place aside
- Add veggies to lb of ground turkey & mix together with seasoning
- Roll ground turkey mixture into small meatball sized balls
- Add Olive oil to pan on medium heat
- Once oil is hot add turkey meatballs to pan
- Brown meatballs on each side
- Once meatballs are browned I add to a pan & place them in the oven for about 10 -15 minutes to ensure they are cooked through
Broccoli
- Spread broccoli on baking sheet lined w/ parchment paper
- drizzle with olive oil
- add seasonings of your choice (I use slap ya mama, garlic powder, onion powder, smoked paprika, green goddess from Trader Joe’s)
- Toss to coat evenly
- Bake on 400 degrees for about 15 minutes or until your desired doneness
Rice
- Warm rice/cook rice by following instructions on your selected rice + add rice to a mixing bowl once finished cooking
- Take a spoonful of vegan pesto add a rice to bowl + mix
Note: I don’t use any filler for the meatballs to keep them lean & they stay intact perfectly while cooking
