Ingredients:
- 4 medium sized japanese sweet potatoes
- 1 Tbsp Slap ya mama
- 1/4 tsp Cayenne Pepper
- 1/2 tsp Black pepper
- 1 tsp Black truffle oil
- Chives/green onion
Instructions:
- Boil potatoes for about 45 minutes (varies depending on the size)
- Remove from boiling water & rinse with cool water & let potatoes cool a bit
- Set broiler to low
- Cut 1/3 of potato off from top of each potato
- Scoop out inside of 1/3 of potatoes & place in bowl (you can get rid of this skin)
- Scoop out insides of remaining 2/3 of potatoes & add to same bowl
- Mash potato in bowl leaving a few chunks
- Add seasoning & truffle oil in and mix into potato
- Fill potato skins back up with seasoned potato mix
- Sprinkle black pepper & a little cayenne on top
- Brush top of potatoes with truffle oil
- Place potatoes back in oven on low broil & let broil for about 5-10 minutes (I always start on low & move to high to get that nice crisp color but be careful not to cook too long)
- Remove potatoes once browned a bit on top
- Top potatoes w/ chopped chives & serve!
